This fun and rather celebratory Pét Nat packs a fizzy, fruity punch- in the best way. It can't contain its excitement when you pop the cap, so have those glasses ready. 

Made with Tuscan Sangiovese and a touch of ruby red Colorino, just to be cute. 

What is a Pét Nat? It's a wine that gets bottled early, before the fermentation process has finished. It's got varying levels of fizz to it. The basis of this ancestral method is in the idea that wine should be made of grapes- nothing else. Legend has it that pét nat, like most good things, was accidentally discovered by monks in the 1500s.

The Australian wine blog Young Guns of Wine sums the glory of pét nat up this way: 

"...generally the province of the avant-garde, and often a middle finger to the establishment...made by those intent on reframing the possibilities for what wine could be – an archetype-smashing movement."

Grape variety: Sangiovese, Malvasia, Vermentino, Pugnitello, Fogliatonda, Petit Verdot, Colorino
Production area: Montecucco, Toscana
Annual production: 990 bottles
Grape harvest: manual, in September
Vinification: Spontaneus fermentation. Varietals harvested together by hand, crushed and pressed. Vinification in steel tank. Fermentation finishes in bottle, 6 months.
