Le Bucce
A mature-feeling orange wine that carries the lightness of summer. Serve slightly chilled and it becomes a portal to the Tuscan Maremma seaside. Tall pines, fresh figs, juicy finish.

Grape harvest: manual, in early-September
Vinification: Spontaneus fermentation. Harvested during the coolest hours of the day, crushed and put in small buckets, punched down by hand daily for slow fermentation. Aged in vintage wood tonneaux (550l) for 6 months.
Total sulfur dioxide: 7mg/l
Flavour and aroma: Notes of honey and fig. Slightly herbaceous like a walk through the Mediterranean pines.
Pairings: A day of the week, a slice of warm sourdough with Atavica olive oil
Serving temperature: 10-12 °C.
